Even the body in ayurvedic medicine is represented by two somewhat different models. One looks quite familiar to western eyes: it envisions the body as a system composed of ducts and tubes, valves and burners (see Figure 6). It is very similar to the hydraulic model that became popular in late seventeenth-century Europe as the workings of the circulatory system came to be known.
Like their analogues in ayurvedic medicine and Galenic humouralism, these follow a hierarchy from more to less crudely material. Many—including blood, sweat, saliva, and the gastric fluids—are extracted at greater or lesser degrees of refinement direcdy from food. Others, particularly jing, qi, and shen (collectively known as the San Bao or 'three gems' for their importance to health and well-being) are far more complex substances. Jing is the natural energy or strength that the body derives from food.
