Herbs such as sage, rosemary, and thyme have even fewer calories than many spices. Yet just 1 teaspoon of paprika or chili powder provides as much as 16 percent of the daily requirement for vitamin A in the form of beta-carotene. Use fresh or dried herbs creatively to cut back on cooking oil (fat) without sacrificing taste and to spark up restricted-diet recipes. Replace salt with oregano and sugar with allspice or anise, for instance. Choose whole-leaf dried herbs rather than ground ones, if possible.

The work of a number of today's herbalists epitomizes the modern expression of the ancient skills of the herbal medicine maker, including rosemary Gladstar, James Green, Christopher Hobbs, Kathi Keville, and Mindy Green. Refer to Suggested Reading at the end of this chapter for the titles of their books. In addition, I cannot overstate the importance of the work of pharmacists, both eclectic and orthodox, in the nineteenth and early-twentieth centuries. Much of the material that follows relies on examples taken from their writings, published in the standard reference texts of their day.

A few drops of oil or more can be applied to painful joints several times a day as needed. Most of these topical applications are based on historical use and are lacking modern clinical trials to support their effectiveness in treating RA. Preliminary studies conducted in India with the herb picrorhiza (page 728) show a benefit for people with RA.102 Currently, this therapeutic effect remains weakly supported and therefore unproven. Southwestern Native American and Hispanic herbalists have long recommended topical use of chaparral (page 657) on joints affected by RA.

Whether culinary herbs such as rosemary or medicinal liqueurs like vermouth and chartreuse, therapeutic remedies are used in large quantities. The very name vermouth comes from the bitter herb wormwood. Herbs maintain their foothold in official pharmacopoeias as major therapeutic agents, in the form of digestive bitters, carminatives, and laxatives of varying strengths. The ideal is to preserve health and maintain wellness, rather than merely treat illness. Of course, there is much more to preventive medicine than consuming medicinal substances, whether medicinal plants or chemical drugs.

This type of activity contributes to effects on memory and cognition, and a combination of these may account for the claim that rosemary is known as the 'herb of remembrance'. It would also apply to sage and many other herbs used as tonics or 'rejuvenating' herbs. Synergy, in that a plant extract is more than the sum of its parts, substantiates the perception that natural medicines have something special to offer, and what was originally perceived as a complication may now be thought of as an advantage, to be utilized for therapeutic benefits.
Some older herbs, such as sage and rosemary, have similar but milder effects and are being investigated for memory improvement. Ginkgo biloba has cognition-enhancing properties and can be used for mild forms of dementia. HYPNOTICS AND SEDATIVES The difference between a sedative and hypnotic is generally a question of dose, especially regarding phytotherapy. Plant products used in this way are not as potent as synthetic drugs, but neither do they have many of the disadvantages. However, as with synthetic hypnotics, these medicines are generally intended for short-term use.

When you choose an omega-3 supplement, choose one that contains both of these fats, along with an antioxidant (such as vitamin E or rosemary) to protect the oils against rancidity. If you can't stomach the idea of fish oil, try versions made from omega-3-rich algae—that's where the fish get it from. Stay away from flaxseed oil, which contains none of the good fiber in flaxseeds and goes rancid very quickly. Also, steer clear of fish liver oils. They may contain levels of vitamin A that can accumulate to toxic levels in your liver. Omega-6 fats aren't all bad.
For parents who don't know where to start cooking with whole foods for their families, we highly recommend The Co-Op Cookbook by rosemary Fifield (Chelsea Green Publishing Company, 2000) and Feeding the Whole Family by Cynthia Lair (Moon Smile Press, 1997). MI-TIEH-HSIANG English Name: Rosemary Botanical Name: Rosmarinus officinalis There are several varieties of rosemary, such as the silver and gold leaves under cultivation in gardens, but the variety known as Rosmarinus officinalis, a small shrub with pale blue flowers and fragrant evergreen leaves, is the kind used medicinally. Its botanical name comes from the Latin ros, dew, and marinus, of the sea, since the wild plant grows abundantly near the seashore. This herb was introduced into China from Rome many centuries ago.
