According to tradition, rosemary was brought to China from the Roman Empire during the reign of Wenti of the Wei Dynasty.
Medicinally, the herb is used for nervous, sick stomach, to clear the stomach of mucus, and to restore appetite and normal digestion.
Prepare as ordinary tea, add a pinch of ground ginger, and drink three or four cups daily. |

ROSEMARY
Taken internally, rosemary has been shown to relieve flatulence and colic, and stimulate bile release from the gallbladder. As a spice, it is a wonderful addition to salads and sauces. But a litde is all you need. Ingestion of large quantities can be toxic.

When the bottle was empty, wine was once more poured on it; this "osemary wine removes, in a remarkable manner, all the watery stuff through the urine and the action of the bowels.

Studies show that rosemary contains acetylcholinesterase inhibitors, substances that can block the breakdown of acetylcholine, a neurotransmitter involved in mental function. Low levels of acetylcholine have been associated with normal age-related memory loss and with Alzheimer's disease. Studies of Alzheimer's patients are under way to determine if using rosemary oil in bath water or directly on the skin can slow down or even stop the progression of this disease.

Suppositories
Suppositories are designed to enable the insertion of remedies into the orifices of the body. While they can be shaped for insertion into the nose or ears, they are most commonly used for rectal or vaginal problems. | Simmer vegetable stock with tempeh, thyme, rosemary and mustard. Stir in arrowroot and return to a simmer. Add potatoes and onions to stock and place all into a casserole dish. Bake at 375° for 30 minutes.
FISH
TILAPIA WITH SEAWEED VINAIGRETTE
(Serves 2)
2 each 6-oz tilapia fillets
1 cup shiitake mushrooms, sliced
'/2 cup Wakame Vinaigrette (see page 277)
In a nonstick saute pan lightly sear tilapia fillets and shiitakes. You may need to rub a light layer of safflower oil on the pan. Flip the filets and top with vinaigrette. Turn heat on low and cover for 5 minutes. |
| Remove onions and toss them with rosemary and Aloe Vera Vinaigrette; serve.
BRAISED CELERY (Serves 2) lh head celery, cut into 4-inch-long pieces
2 cups vegetable stock I T curry powder
1 tsp cumin seeds lh tsp celery seeds 1 sprig thyme 1 bay leaf
4 peeled garlic cloves cut in half
Toss all ingredients and place in a casserole dish with lid. Bake at 350° for 45 minutes. Serve immediately. This makes a great leftover.

'A cup lentils, washed and drained
1 cup celery root, V2 inch diced
6 cups vegetable stock

Place the rosemary and garlic on a cutting board. Lightly crush both with the side of a heavy knife. Place the rosemary, garlic, and lemon rind in a clean bottle with a tight-fitting cap. Pour in the oil and lemon juice. Cap the bottle and shake well. Refrigerate if not using right away. Shake before serving.

Inhale these for sinusitis: cinnamon, lemon, eucalyptus, lavender, pine, rosemary, or thyme.
