Roast Eye of Round with rosemary and Potatoes
Ingredients
2 pounds eye of round
1 teaspoon rosemary, crushed in a small bowl Sea salt and freshly ground pepper to taste
8 small red potatoes, cut in half
2 onions, sliced
2 tomatoes, sliced Fresh parsley, chopped
Directions
Preheat oven to 350 degrees. Trim off excess fat from the roast and sprinkle with crushed rosemary, salt, and pepper. Place the roast on a rack in a roasting pan and add 1 ounce of water to bottom of pan. Place potatoes on rack around roast and sprinkle with rosemary. Roast until tender, approximately V/i hours. |

Place the bulgur and quinoa in a dry heavy skillet (such as cast-iron), stir-fry pan, or wok over high heat and cook, stirring constantly, until the grain smells toasty. Remove from the heat immediately and set aside.

Making the tea: Pour boiling water over 2 g of finely cut dried leaf. Steep for 15 min and then pass through a tea strainer.
