Mix the crumbs with the rosemary and thyme, and season with salt (optional) and pepper. Dip each escalope in a bowl of cold filtered water and then coat with as many crumbs as possible. Heat half the oil in a non-stick skillet, add two escalopes at a time and saute over medium heat for about 3 minutes on each side until golden, crispy and cooked through. Place the cooked escalopes on some thick paper towel and keep warm while you cook the remaining escalopes in the rest of the oil. Drain the last batch on more paper towel and serve immediately.

She made an herbal tea out of sage (but did not tell us how she made it). Then she used the sage tea as a rinse after each shampoo. To her astonishment, she realized that her dandruff had disappeared. Being of a scientific turn of mind, she stopped using the sage tea rinse. Sure enough, her dandruff came right back. Rosemary is sometimes used to treat indigestion in the elderly by European herbal practitioners.38 The German Commission E monograph suggests a daily intake of 4—6 grams of sage leaf.39 Pennyroyal is no longer recommended for use in people with indigestion, however, due to potential side effects. Demulcents are the third category of herbs used to treat indigestion and heartburn. These herbs seem to work by decreasing inflammation and forming a physical barrier againsr stomach acid or other abdominal irritants.
Volatile oils from oregano (page 719), thyme (page 752), peppermint (page 726), tea tree (page 751), and rosemary (page 739) have all demonstrated antifungal action in test tube studies.21 A recent study compared the anti-Candida effect of oregano oil to that of caprylic acid.22 The results indicated that oregano oil is over 100 times more potent than caprylic acid, against Candida.

Sage is perhaps most similar to rosemary (see page 505). The primary medicinal components in sage are volatile oils, flavonoids, and ros-marinic acid. Some of the distinct effects of sage that have been reported include anhidrotic (prevents perspiration); blood sugar-lowering effects in diabetics; antimicrobial; and drying up the flow of milk during lactation. This latter effect is the reason many herbalists recommend that pregnant and nursing women avoid sage. HOW TO SELECT AND STORE Whenever possible, choose fresh sage over the dried form of the herb, since it is superior in flavor.
Mince some of the remaining rosemary leaves and use to flavor a vinaigrette composed of Vi cup olive oil, Vi cup lemon juice, Vi teaspoon salt, Vi teaspoon honey, and pepper to taste. Use to dress a salad made of 1 medium diced cucumber, 2 halved and sliced Roma tomatoes, Vi sliced red onion, a dozen kalamata olives, and Vi to 1 cup cubed feta cheese. Due to both its firm flesh and its moderate fat content, swordfish is an ideal fish to poach. Immerse 2 steaks in a pan of fish stock or a mixture of water and Vi cup lemon juice or Vi cup white wine.
Complementary foods for saffron are almonds, apples, basil, dairy products (including nonfat versions), cilantro, cinnamon, citrus, fish stock, garlic, most grains, pistachios, potatoes, rosemary, thyme, tomatoes, vinegar, and white wine. • For a delicious twist on your standard omelet, saute chunks of new potato in olive oil until golden. Whisk together eggs, finely sliced scallions, chopped tomatoes, and salt. Stir in a pinch of powdered saffron or infused threads that have been allowed to soak for 20 minutes in a few spoonfuls of hot water.
