Steep in water at the third boil. Water at a full, rollicking boil is what's needed to release the full flavors of heavy traditional teas and hearty herb blends. You don't need a thermometer to identify water on the third boil.

Consumer Reports, for example, has identified that there is wide variability in the amount of active ingredients in various ginkgo products sold over-the-counter. Teas made from a variety of herbs such as chamomile [Chamaemelum nobile (L.) All. and Matricaria recucita L. flowers), lime flowers (Tilia cordata Mill., T. platyphyllos Scop., T. x europea) and passionflower (Passiflora incarnata L.) have a reputation for a mild sedative effect. The chemical reason for any activity is not certain, but recent work has shown that some flavonoids found in these plants bind to benzodiazepine receptors, so this may explain their reputed activity. |

The use of standardized extracts, which are made up of specified quantities of herbal ingredients in commercially prepared remedies, is a good thing, but is likely to further complicate the use of pharmaceuticals combined with herbals. As herbal remedies are better prepared and quantified, they become more effective—and more dangerous when unknowingly mixed with pharmaceuticals.

If you prefer more specific guidelines for amounts, keep your protein portions to 3 to 4 ounces per meal and oils and butter to 4 tablespoons a day. Vegetables are essentially unlimited. You can eat two eggs a day with no problem, and you should use the whole egg, preferably from free-range chickens.
