But even the herbs that lost out to oregano are powerful antioxidants in their own right—and definite winners in terms of taste. We strongly recommend using herbs and spices for flavoring instead of salt and artificial chemical additives. We'll introduce you to some of the more impressive Okinawan herbs and spices in the next chapter; meanwhile, here are some you may already know.
Marjoram has a flavor similar to oregano but is subtler and a little bit sweeter. The pretty pink flowers are an attractive garnish. Add marjoram to olive oil. Brush it on broiled or grilled fish or meat. Add it to salads. Stir it into creamy soy-based soups, tomato soup, pasta sauces, and lentils. Add it to chili near the end of cooking. To ready it for use, remove the leaves from the stems and chop leaves or use whole. MINT. Peppermint and spearmint are the most popular varieties for cooking, although there are many other species. Both sprigs and flowers make a pretty garnish.
To use oregano, remove the leaves from the stems and chop leaves finely. Rosemary. The strong, needlelike leaves of rosemary have a piney aroma. Although it has a strong flavor, it goes well with almost any dish. Coat new potatoes or sweet potatoes with olive oil and rosemary before roasting. Stir into bread dough. Stuff into slits in leg of lamb (with garlic slivers) or tofu before roasting. Sprinkle on rolled-out whole-wheat pizza dough for herbed focaccia. To prepare rosemary, remove the leaves by running two fingers down the tough stem from top to bottom. Chop leaves, or use whole.
